I just participated in Fredlet’s recipe round robin. Here’s what I sent out. Since I was writing it up, I decided to share with you as well:
Peppermint frosting
(for use on white or chocolate cakes)1/3 c evaporated milk
1/2 tsp peppermint extract
1/4 tsp salt
4 1/2 c sifted confectioners’ sugar
1/4 c butter, softened
1/4 c crushed peppermint candy or chocolate chips (optional)1. Blend milk, peppermint extract and salt.
2. Mix in powdered sugar
3. When mixture is smooth, fold in butter and mix well
4. Frost cake, Sprinkle with crushed candy or chocolate chipsThis frosting is white. Feel free to color red or green (for the “mint chocolate chip” effect).

You mean, I’m *supposed* to frost desserts with it and not just eat it with a spoon?? That’s no fun!!!

The first time I made it, I was like 15 or 16 and I made a layer cake. There’s just enough for a layer cake & so I had none left over for scooping out with a spoon. I was so disappointed.
